Cincinnati Style Chili
This is the recipe for the chili served up at our Halloween parties. It's an adaptation of an old Cincinnati style chili recipe.
4 lbs ground beef

onions. chopped

garlic cloves, chopped
2 Tbl cumin
8 Tbl chili powder
6 bay
leaves
2 tsp cinnamon
4 tsp Tabasco sauce
4 Tbl cocoa powder
4 Tbl Worcestershire sauce
8 Tbl white vinegar
56 oz canned chopped tomatoes
2 Tbl fresh oregano, chopped
4 cans kidney beans (optional)
Brown the ground beef with the onions and garlic.. Add the rest of the
ingredients except for the tomatoes, oregano, and beans. Let cook for
about 30 minutes. Add about 2 cups of water and stir well. Take off
the stove and cool in refrigerator overnight. This will allow the fat from
the ground beef to rise to the top of the pan and harden.
Remove all the fat and discard. Put the chili meat back on the stove and add the tomatoes, oregano, and beans (optional). Simmer for about three hours and serve. Add more hot sauce or hot peppers to suit your taste.
Cincinnati-style chili is typically made without beans. It is very popular in Cincinnati, Ohio where restaurants like Skyline Chili serve it up over spaghetti noodles with a mountain of fresh cheddar on top.
